
PICUAL
The fruit, the olive, is a succulent and very oily drupe from 1 to 3.5 cm long, ovoid or somewhat globose, green at the beginning, which requires a year to acquire a black-purple color at full maturity. The fruit is collected by differentiating between the “soil olives” and the “flying olives” to offer a better quality in the oil produced. Its oil presents great stability. With a milky yellowish color, its flavor is slightly spicy and bitter with fruity smell.
