Picual olives are succulent and highly oily drupes, measuring 1 to 3.5 cm in length, with an ovoid or somewhat globular shape.
Initially green, they take a full year to turn into a black-purple color at maturity. The olives are harvested and sorted into those collected from the
ground and those from the tree to ensure the production of high-quality oil. The resulting oil is highly stable, with a milky yellow colour, slightly spicy flavour, and a fruity aroma accompanied by a hint of bitterness.
