ARBEQUINA
The variety of Arbequina olives is characterized by a great resistance to cold, a very reduced vigor and a low resistance to calcareous soils. The size of its fruit is the smallest of the varieties grown in Spain, between one and two grams. The arbequines are small olives, but very appreciated for their early entry into production, high productivity and good fat yield, over 20.5% of oil, which places it among the varieties with the highest percentage of oil extraction. It produces fruity oils of a greenish and yellow color, with soft and sweet aromas of apple and almond. They are bitter and a little bit spicy, presenting a great delicate pleasant taste.
