Arbosana is a medium-matured variety of olives (harvested three weeks after Arbequina). Small size, ovoidal shape and slightly asymmetric. It presents a violet color and the bone pulp ratio is low.
The Arbosana extra virgin olive oil is fruity, persistent on the palate and resistant to rancidity. It is astringent, with sweet, bitter and spicy ﬂavors of medium-high intensity.
