The fruit, the olive, is a succulent and very oily drupe 1 to 3.5 cm long, ovoid or somewhat globular, green at first, which takes a year to acquire a black-purple color at full maturity. The fruit is harvested differentiating between olives from the ground and olives from the flight in order to offer a better quality of the oil produced. Its oil is very stable. With a milky yellow color, its flavor is slightly spicy, with a light bitterness and fruity smell.
