The arbequina olive variety is characterized by high resistance to cold, very low vigor and low resistance to calcareous soils. The size of its fruit is the smallest of the varieties cultivated in Spain, between one and two grams. Arbequina olives are small, but highly appreciated for their early entry into production, high productivity and good fat yield, about 20.5% of oil, which places it among the varieties with the highest percentage of oil extraction. It produces fruity oils, between greenish and yellowish, with soft and sweet aromas of apple and almond. They are very bitter and slightly stinging, with a great softness.
